A great side dish inspired by Chipotle's rice, with a keto/low carb twist! This is great with marinated skirt steak (or chicken) or any other Mexican flavors!
1 10-ounce bag frozen riced cauliflower (or fresh) - about heaping 2 cups
2 tablespoons grass-fed butter
2 crushed cloves garlic
2 tablespoons chopped fresh cilantro
1 tablespoon lime juice
salt to taste
Cook cauliflower rice in microwave according to package directions.
Heat skillet over medium/medium high heat. Add butter and garlic, sautéing for 1 minute or less, until garlic is slightly golden. Add cauliflower rice.
Sauté cauliflower rice for 1-2 minutes.
Remove from heat, mix in cilantro, lime juice, and salt to taste. Enjoy!
