Cilantro Cauliflower Rice

A great side dish inspired by Chipotle's rice, with a keto/low carb twist! This is great with marinated skirt steak (or chicken) or any other Mexican flavors!


Ingredients:

  • 1 10-ounce bag frozen riced cauliflower (or fresh) - about heaping 2 cups

  • 2 tablespoons grass-fed butter

  • 2 crushed cloves garlic

  • 2 tablespoons chopped fresh cilantro

  • 1 tablespoon lime juice

  • salt to taste

Let's cook!

  1. Cook cauliflower rice in microwave according to package directions.

  2. Heat skillet over medium/medium high heat. Add butter and garlic, sautéing for 1 minute or less, until garlic is slightly golden. Add cauliflower rice.

  3. Sauté cauliflower rice for 1-2 minutes.

  4. Remove from heat, mix in cilantro, lime juice, and salt to taste. Enjoy!
